I got this recipe from my friend and personal trainer: Joanna (Yummy Fitness Mummy). If you’re crazy about almonds (like I am), you’ll love them cause almond flavour is quite strong in here. They’re perfect for lunch and dinner if you want a vege option or if you’re on a low carb diet. I’ve tried them hot and cold and liked both versions so they’re a fantastic idea for a quick meal in your work lunch boxes.
What you need:
- 2 leeks
- 1 broccoli
- 2 eggs
- a handful of mozzarella cheese
- ground almonds (or almond flour which I used instead) – so much that the whole mixture is not too liquid
- coconut oil
How to prepare it:
Cut leeks into pieces and boil together with broccoli until semi-hard. Rinse, let it cool for a while and then blend it. Add eggs, mozzarella and ground almonds and mix it all together until the whole mixture is not too liquid anymore. Form small burgers and fry them on coconut oil on both sides until golden brown.
